While celebrating its first Michelin Star from Khao restaurant for Michelin Guide Thailand 2020, Four Seasons Resort Chiang Mai also introduces its new Char restaurant which pays homage to the age-old tradition of grilling.
Designed by renowned architect Bill Bensley who is also behind the resort design, Char by Four Seasons, led by Sous Chef Marco Avesani, will focus on farm-to-table ingredients mainly sourced from local farms in Northern Thailand. This echoes the resort’s mission to be as sustainable as possible. The concept actually came from Chef Marco’s childhood. “I was in charge of starting a fire in the pit – we did not have heaters in those days. Food was cooked outside most of the time on an open flame,” he shares.
At lunch, they serve lighter dishes like salads, quinoa spaghetti with spirulina and wood-fired pizzas and sandwiches, while dinner by the fire is accompanied with grilled seafood and steaks, paired with signature condiments and homemade dressings, from srira-char to bacon mustard and pale ale ketchup.
